Whole Orange Cake

A delicious cake if you don't want a tonne of cream - and who can resist the scent of fresh oranges?


This is Gluten free too!!



Flourless Orange Cake:

.

140g Whole orange purée

250g eggs

250g almond meal

160g castor sugar

12g Baking Powder


Preheat oven to 135°C


1. Whisk eggs & sugar for approx 7-8 mins or until doubled in volume and very fluffy

2. Add dried ingredients, then fold in the orange purée

3. Pour batter into greased/ baking paper lined baking tin/cake pan and cook for about 60 mins - or until skewer comes out clean


Orange purée :

Place orange in saucepan and cover with water - bring to the boil, and after 10mins - empty water, refill again and repeat 3 times! (Boil orange 3 times for 10mins a time) this part helps ‘clean’ the orange skin and reduces bitterness


If you boil 2 oranges, you can freeze the purée for quick use next time too! #toptip #bakinghack
